The fall harvest yields a bounty of squash, pumpkins and aromatic herbs. Join Chef Elizabeth Gallery for a cooking class that celebrates these seasonal flavors while teaching hands-on preparation and practical techniques. In this intimate class, you will learn how to cook nourishing, hearty squash dishes paired with a perfect, tender risotto. You'll also learn to identify varieties of heirloom pumpkins, expertly season dishes with late fall herbs, and take with you skills to chop pumpkins and squash safely. 

class: 10 am - 1 pm, lunch: 1 pm - 2:30 pm

  • butternut squash risotto
  • roasted brussels sprouts with sage
  • crisp greens, toasted pumpkin seeds, apples and blue cheese
  • rosemary spaghetti squash fritters
  • whole wheat rolls with compound butter
  • heirloom pumpkin creme brulee
