Armijo Organic Farms has been growing New Mexico Chile for over 20 years. Their growing practices are certified by the New Mexico Department of Agriculture (NMDA) and follow the USDA Organic standards. No GMO products or pesticides are used. Their chile is grown in alkaline clay loam soil using organic growing practices on their seven-acre farm in Sabinal, New Mexico.
Their selected chile pods are harvested at the peak of maturity when the highest levels of vitamin A and C are reached. Their seed is harvested and saved from the best solar dried red chile pods each year since 1981 when they started. Their chile variety is a cross between “Big Jim” and “Sandia Hot” lovingly called “Sabinal Special” it yields a large pod with medium to hot pungency.
Their processing operation is also certified organic by the New Mexico Department of Agriculture (NMDA). They fire roast their chile, then peel, dice, and freeze it in half-pound and one-pound packages. There’s no water or preservatives added. They also produce a high quality dry red chile pod, which we make into red flakes and powder.
The pungent “ready to eat” semi sweet taste of their green and red chile sauces are perfect for enchiladas, tamales, tacos, stir-fries, soups, stews, as a dip or added to your favorite dish.
