The fall harvest yields a bounty of squash, pumpkin, and aromatic herbs. In this hands-on cooking class, guest Chef Elizabeth Gallery will share how to cook nourishing, hearty squash dishes and teach you how to identify a variety of heirloom pumpkins. Balance these autumnal flavors with sage and other fresh herbs. Lunch to follow the class.

Menu: 

  • Butternut Squash Ravioli with Pear Brown Butter Sauce
  • Brussels Sprouts with Sage, Garlic and Crispy Wild Mushrooms
  • Coconut Curried Spaghetti Squash
  • Whole Wheat Rolls with Sage Compound Butter
  • Heirloom Pumpkin Cheesecake
  • Café Au Lait

Chef Elizabeth Gallery has studied in kitchens for 17 years, and we are excited to have her return to Los Poblanos. She is current a practitioner and student of Ayurveda, herbal therapies and traditional cookery.
